Christmas Recipes

I helped my mom make these tonight and they are sooooooo good that I had to share ! Could be a good place for anyone else to swap any goodies they want as well.

Cream Cheese Raspberry Brownies

5oz semi sweet chocolate [chopped]
1/2 cup splenda [granulated]
250g cream cheese
2 eggs
1 tsp vanilla
1/2 cup softened butter
1/3 cup seedless raspberry jam
1/4 tsp baking soda
1/4 tsp salt
2/3 cup flour

Line 8" pan with tin foil, leaving overhang for handles. Set aside.
In heatproof bowl over saucepan of hot [not boiling] water, melt chocolate, let cool slightly.
In seperate bowl, beat cream cheese with half the splenda until smooth. Beat in one of the eggs and half the vanilla; set aside.
In seperate bowl, beat butter with remaining splenda, until fluffy. Beat in remaining egg, and all but 2 tsp [30 ml] of the jam and the remaining vanilla, then chocolate, mixing well. In small bowl, whisk together flour, baking soda and salt; mix into chocolate batter just until combined.
Spread chocolate batter in prepared foil pan. Spread with cream cheese mixture. Spoon remaining jam, in small dollops over top. With knife, zigzag through cheese and jam layers for marble effect.
Bake in 350 degrees F [180 degrees C] oven 30-40 minutes, depending on the oven. Let cool in pan, then refridgerate until chilled, about two hours.
Cut into squares and enjoy !

that does sound good and it is something that i can eat as well ... beings it is made with splenda smiles

and you can get sugar free smuckers raspberry jam too!  woot woot!

Sorry Lil, these ones are NOT sugar free, but they did tie for 1st in a cookie smackdown where Kurt works!

Cookies
1 Duncan Hines Devil Foods Mix
2 Eggs
1/2 cup oil
1 cup chocolat chips (semi-sweet)

mix ingredients.  Bake at 350 for 7-9 minutes depending on how hot your oven is.

frosting
2 1/2 cups confectioners sugar
1/2 tsp peppermint extract
1/4 cup butter

Chocolate glaze
1/4 cup butter
2 T corn syrup
1 cup chocolate chips

Frost your cookies and drizzle the glaze over them

I refrigerate them because of the butter in the frosting
