...Years ago, I was having medical problems, and the MD quizzed me over what I ate...I was honest...I thought that I was eating well...I mostly ate chicken and fish. She nodded...and then told me..."Don't eat the skin...it has LOTS of bad stuff." I listened, and nodded...with respect...

Of course...I kept eating chicken wings...

...and salmon fillets...the skin of the salmon is SO GOOD...and the thick skin on a chicken wing REALLY tastes good!!!
*S*...I also took over carving the turkey at our family Thanksgiving, after my divorce...I had to argue the issue with my brother...he backed off...I almost WENT PANTHER!!! I enjoyed carving the turkey...

...I would have to do 'quality control'...I would carefully carve slices off the bird.
I would wrap pieces of the meat in the crispy skin...and soak them in the drippings...and eat them. Of course...I had to do 'quality control' as I did my task. I was always very happy as I set the platter of the carved bird on the table...there was NO SKIN on any of the meat...I had eaten all of the skin...

I didn't eat much during the dinner...just a few pieces of the breast...and a bit of dressing and gravy...

...I was already full.
So, I am looking forward to November...I will be carving the turkey...my mother has already agreed who will do that task...
